Job Brief:
● Nature of Employment Permanent: Full time position
● Working Hours: 38 hours per week Monday to Friday
● Salary Range: AUD80,000 to 100,00 per year + superannuation

The Coogee Bay Hotel has been operating as a bar and a hotel since 1873. Offering a variety of services and products including 2 styles of accommodation, an entertainment venue, 4 bars, 2 restaurants, a gaming area, and 2 bottle shops.
For 150 years, Coogee Bay Hotel has hugged the stunning coastline of Coogee Beach. As a bustling seaside village grew up around us over the decades, locals made this place the heart of their community.
We are looking for a Restaurant Manager to assist the business with managing the restaurants we have on site.
Responsibilities:
As the Restaurant Manager it is your duty to oversee the operation of the whole venue and manage the Coogee Bay Hotel’s Plan of Management to ensure that compliance, presentation, stock, entertainment and guest services are maintained at a high standard at all times. Your tasks and duties also include:
• Full understanding of the weekly financial reports & ensuring they are completed on time.
• Complete weekly forecasts on time and accurately for Marrah
• Knowledge and understanding of GP & all SAP targets/requirements
• Overseeing all review platforms and responding when necessary - feedback
• Attend formal Bepoz training. Be able to understand and produce sales reports, product sales mix, creating a product, specials, promotions.
• Undertaken training relating to the budget & budget processes, up to & including revenue, GP, payroll management, midline expenditure, EBITDA & Capex processes
• Responsible for all food service rosters, including Marrah, food runners, conferencing & events
• Undertake recruitment including interviews & onboarding/training
• Create a 3-6 month plan for revenue generation in Marrah
• Be involved in upcoming menu development & ensure all processes are followed per procedure
• Assist in the undertaking & roll out of the new functions & events procedures
• Have a solid Understanding of the CBH POM – including compliance, DA conditions, trading conditions
• Have a solid understanding of CBH contacts in relation to position & job descriptions
Undertake & attend structured meetings with all food services teams & attend monthly meetings in preparation
